can we have offset that starts the day they activate their account rather than picking a day. we are offering to a large group of staff that will join at different times

Hi Coach - this already exists: Once an offset date has been assigned to an Easy Join code, that date's session will be "Day 1" for anyone who uses that Easy Join Code. Therefore, use Easy Join codes to make sure offset dates apply as Day 1 for anyone who joins at any time.
